Buffalo Stew Slow Cooker Recipe
I recently got my hands on some Buffalo Stew Meat sent over from U.S. Wellness Meats. Man, was I excited to get all up in this arena. I really dig ground buffalo and bison. After all, they are members of the same family. I had never done anything crazy with the meat though besides stir fried it with some sweet potatoes or formed some burger patties out of it. This week, I wanted to get as much use out of my crockpot as possible. Our families are celebrating Passover this Saturday afternoon (a bit late, I know) and Tim and I are in charge of bringing over the meat and desserts. I know this will amount to a lot of preparation and execution in the kitchen for us. After all, we like to impress our families.
To say the very least, that is when the crockpot comes in handy. I know I will need to spend a lot of my time elsewhere in the kitchen, so why not have my slow worker do some of the work for me? I know what you are thinking. It's Passover, and I am about to chow down on some buffalo stew?! Yeah, that's right. Although my past Rabbis and Sunday School classmates may look down upon me for this, I have never ever kept kosher. I love everything saturated with bacon, and I am a carnivore by law. Not Jewish law, apparently. Either way, celebrating Passover and many other Jewish holidays is about the experience for me. It has been tradition for many years to get together with my family during the holidays to simply eat and enjoy each others' company. Now, that I have covered my Jew bases, let's see what's brewing in the slow cooker, shall we?
- 1 1/2 pounds buffalo stew meat
- 1 sweet onion diced
- 1 yellow onion diced
- 2 red/orange/yellow bell peppers diced
- 4 stalks celery chopped
- 8 carrots chopped
- 28 ounces plum tomatoes
- 8 ounces tomato sauce
- 1 tablespoon garlic powder
- 1 tablespoon oregano
- 1/2 teaspoon smoked paprika
- Sea salt and pepper to taste
-
Place all diced and chopped vegetables at the bottom of the crockpot.
-
Place your buffalo stew meat on top.
-
Add all of the spices and massage into the meat.
-
Now, add in the plum tomatoes and tomato sauce.
-
Turn the crockpot on low and let cook for 8-10 hours. Enjoy!
Feel free to use beef instead of buffalo.
